What good are the jewels once you have maxed ones for each piece of equipment?

Bear with me folks, I'm an old retired container ship captain and although I've been gaming since the 70s, some of the new stuff is hard to fathom. I'm a quick learner though. Any advice on crafting etc would be gratefully accepted.
