How are people finding specific trinkets?

For warriors, the top 50 players all have the Emblem of the Everbound trinket. 93 out of the top 100 all have the Emblem of the Everbound trinket. I've been on the lookout for one, even a low level one, since the event started.

Crafting is disabled during the event. You can get boxes that let you choose specific gear items for any slot except trinkets. The guy who sells gear and enchantments doesn't sell trinkets (or at least he hasn't on any refreshes that I've seen since the event started).

Is there a means of choosing that I'm not aware of? Is there a specific trial to farm with a higher drop rate of trinkets?

It's all luck, and numbers...

Gornathan can sell trinkets, so check there every now and then. Or use a LOT of Gems to refresh and hope.

Some also do a LOT of trial runs and hope for drops, we're talking in the 100s here, considering that the veteran players can do a run in about 30 to 40 seconds.

How is 30 - 40 seconds possible? I see them in the leaderboards too, and even if I go back to lower trials where I can 1shot the boss, just moving around the map to get the boss to spawn takes longer

I don't play other classes, so don't know the details... basic idea is gather as many mobs together as you can and shred/explode/freeze/burn/whatever them, then do the same to boss. As you mentioned, it's the mob phase that usually takes more time, so need quick movement and gather big group.
