OK, the grey bar is related to CC resistance. So the boss or NPC with the bar is resisting the heroes/minions attacks. Somehow, to some degree for a while. Practically, what good is knowing this? How do I use it?

For example, Blizzard will not freeze a mob/boss when they're immune, so if you see them immune you might wait to cast your Blizzard until they can be frozen, and then also hit them with Frost Beam, which does increased damage to frozen creatures. This may or may not increase your overall kill time or DPS depending on how long you have to wait. But it does add some additional opportunity for strategy above button mashing your skills.
