The individual parts are level 70, 71 or 72.
How do I get higher level set parts? e.g. 75 to 79

Chance of drops in trials, story drops max out at level 72. Max chance of level 77 (roughly 2%) at Trial level 140.

Most would craft, so that you can choose the specific stats. Master Crafter perk unlocks at Crafting Mastery level 25, which has a chance of increasing crafted item level, this chance increases as you level up crafting, and max out at 50%. So you select a 71 to craft, and there's a chance of level increasing to a max of 77.

Only way to get above level 77 is to use the Starforged Hammer, which increase item level by 1. So, repeated craft for that level 77, then apply 3 Starforged Hammers to get to max level of 80.
